I absolutely love a paneer dish and this is one of my favourites . If you want it spicier add another chilli or up the chilli powder
Ingredients
Tomato Palak Paneer
Veg oil
250 g paneer
1 large onion chopped
1 tbsp ginger garlic
1 finely chopped green chilli
400g tin chopped tomatoes
1 tbsp tomato purée
1 1/2 tsp coriander
1 1/2 tsp cumin
1 tsp turmeric
1/2 tsp chilli powder or to taste
Salt and pepper to taste
1 bag spinach
Method
Fry paneer in 1 tbsp oil until golden and remove from pan
Add splash more oil and on a medium heat fry onion until golden
Add ginger garlic and green chilli, stir well and cook for a minute or two
Add the powdered spices with salt and pepper and cook another couple of minutes, add a splash of water if it starts to stick
Add tomatoes and purée with stick blender leaving a few chunks
Cook until you have a really thick sauce
Add the paneer back to the pan, stir well to coat
Add the spinach a handful at a time to wilt
Pop the lid on and cook until the spinach is how you like it
