Spicy Butternut Squash By Tracey Ramseebaluck

Spicy Butternut Squash.


Butternut squash peeled and chopped

1 Onion cut in half sliced

1tomato chopped

2tsp Panch phoran

3 dry red chillies

10 to 12 curry leaves

half tsp turmeric

half tsp ground black pepper

1tsp kashmiri chilli powder

1heaped tsp cumin powder

1heaped tsp Coriander powder

2tsp grated ginger

2 cloves of garlic crushed

1tsp salt

chopped coriander

150mls hot water

2tbsp oil.


Heat oil in pan add Panch Phoran and dry chillies,sauté 30-40 seconds, add onions and curry leaves, cook till onions are soft and golden,add garlic and ginger cook till raw smell goes, add powdered spices mix well then add tomatoes and cook till tomatoes soft and oil is separating, add butternut squash giveca good stir so it's all coated in spices,add water cover and cook till squash is nice and tender,can add a little more water if needed check for salt add chopped coriander.
