Shakshuka By Linda Knight

Simple but spicy 🌶 Shakshuka with spinach for a quick and easy dinner tonight

Chop up one onion, one red pepper, one green pepper and sweat down in a little oil until soft

Add 3 crushed cloves of garlic and a finely chopped green chilli and cook a couple of mins

Then add

1 tsp coriander

1 tsp cumin

1 tsp Kashmiri chilli powder

2 tsp paprika

Salt and pepper to your taste

Cook for about a minute

Add 400g tin of chopped tomatoes

Approx 150 ml water and 1 good tbsp of Tom purée

Cook for about 15 mins with lid on until soft and incorporated

Add a couple of big handfuls of baby spinach and cook for a few minutes until slightly wilted

Make wells in mixture and add eggs

Put lid back on until eggs are cooked, approx 5 mins garnish with chopped coriander
