4-6 tbsp oil

1 tsp cumin seeds

2/3 dried red chillies

1 onion finely sliced

2lbs potatoes

1/2 kg saag

1 tsp ginger paste

2 tsp garlic paste

2 green chillies chopped

1 tsp red chilli powder ,

1 tsp coriander powder ,

1 tsp dry roasted and crushed cumin powder

1 tsp dry roasted and crushed coriander seeds ,

1 tsp crushed red chilli flakes ,

1 tsp salt ,

1 tsp red Kashmiri chilli powder ,

1 tsp Garam masala ,

1/2 tsp turmeric,

1 tsp kasuri methi

handful fresh Methi

1/2 cup tomato purée

fresh coriander

2lbs potatoes chopped


1. Heat the oil.

2. Add cumin seeds.

3. Add dried red chillies.

4. Let sauté a minute

5. Add a finely sliced onion and fry until lightly golden brown

6. Cut potatoes in small pieces

7. Add to the pan and cook until 50% cooked approx 7-10minutes

8. Soak chopped saag in water and leave nearby to use later

9. Add ginger paste, garlic to the pan

10. Add chopped green chillies

Stir well one minute

11. Add spices red chilli powder ,coriander powder , dry roasted and crushed cumin powder, dry roasted and crushed coriander seeds ,crushed red chilli flakes , salt , red Kashmiri chilli powder , Garam masala , turmeric, kasuri methi to the pan and stir one two minutes

12. Drain the spinach and add to the pan also

13. add a handful of fresh methi

14. Add tomato purée on top of the spinach.

15. Cover 1 minute to steam them mix well cook on moderate heat

16. Potatoes should have almost cooked

Cover pan lower heat and let cook 5/10 minutes then turn off heat

  • Garnish with fresh coriander
