Besan Ladoo

2 cups gram flour

1/2 cup ghee

2 green cardamom seeds (ground)

Handful almonds

Handful pistachios

Sugar (should not be coarse sugar) and amount depends on your sweet tooth!

Low flame: Heat Ghee in a non stick wide pan and add gram flour. Continue cooking the gram flour on a low flame (you don’t want to burn the flour using a high flame). You must also keep stirring and mixing. Do this until ghee separates out and the mixture becomes runny. Usually it takes about 15-20 mins. If you are using more quantities than above, it will take longer to roast the flour.

When ghee releases That’s when it’s ready. Turn off heat and add the ground cardamom seeds, almonds and pistachios. Mix.

Leave to cool but only allow it to cool where the mixture still remains warm enough to touch. Add sugar to your taste. Mix and roll into balls, let them rest so they set. I sometimes pop them Into the fridge to firm up for 15 mins.
