Vegetable Pokora By Shai Ayoub’s Mum

My mums pakoras are so delicious, she has been making this recipe for years and everyone who tries one always wants the recipe! They are so delicious as a starter or even a snack with hot tea. This recipe feeds a party.

Ingredients

4 onions finely sliced

4 potatoes sliced into thin bite size pieces

3 cups gram flour

1 tbsp jeera powder (cumin)

1 tbsp dhaniya powder (coriander)

3-4 finely sliced green chillies

salt to taste

2 tsp kashmiri chilli powder

1 tsp turmeric,

1/2 bag chopped spinach

1 cup fresh coriander

1 tsp garam masala

1 tbsp chaat powder

2 tbsp plain yoghurt

1 tbsp lemon juice

Salt to taste

oil for frying.


Method


Mix everything together and try and achieve a balanced mixture not to thick not too thin. If too thick you can add a little water. Add the salt just before cooking, so if you are not going to fry the pakora’s instantly then add the salt later just before use as otherwise it waters down the mixture. Take a spoon and add spoonfuls of the mixture to hot oil, be careful when doing this as the oil may splutter. Fry a few minutes each side until golden brown.
