Paneer And Courgette Skewers By Linda Knight

Paneer And Courgette Tikka Skewers .

Cooked in the air fryer

Garnished with coriander and fresh mint


Serves two

Block of paneer

1 small red onion

1 red pepper

1 small courgette ( optional)

100 ml Greek yoghurt

1 tbsp oil

1 tbs lemon juice

1 tsp minced ginger

1 tsp minced garlic

1 tsp Kashmiri chilli powder

1 tsp paprika ( not smoked)

1 tsp kasuri methi

1 tsp coriander

1tsp chaat masala

1/2 tsp turmeric



Method


Mix the yoghurt , oil, lemon juice , garlic, ginger and all the spices together in a bowl

Chop the paneer into chunks

Chop the onion into “petals”

Chop the red pepper into chunks

Chop the courgette into chunks , if using

Add the paneer and veg to the yoghurt spice mix and leave to marinade for a couple of hours but at least 30 mins

Heat the air fryer to 180 c

Thread the paneer and veg onto skewers

Cooked for 15 mins checking every 5. Turn if you need to. Paneer should be soft and veg crunchy
