1 medium aubergine cut into cubes
2 medium onion chopped
1 cup chopped tomatoes
Salt to taste
1 tsp chilli powder or to taste
1/2 tsp turmeric powder
1 tsp coriander powder
1/2 tsp cumin powder
1/4tsp paprika powder
1/2 tsp Garam masala
1 tbs ginger garlic paste
1 tsp basaar
1 tsp cumin seeds
1/2 cup oil or as needed
1 tbs dry fenugreek leaves
Chopped coriander for garnish
Heat a pan add oil,once oil is hot add cumin seeds let it sizzle.
Add onions cook on medium heat,sauté onions until tender.
Add garlic ginger paste keep stirring for a minute then add the tomatoes mix well keep stirring until it blends with the onions.
Now add the dry spices (except for dry fenugreek leaves) keep stirring for 10mins.
Add the aubergine mix well and keep stirring on medium low heat add 1/2 cup water and stir until the colour changes about 15 minutes.
Add the fenugreek leaves mix well and stirring at this point the oil separates from the mixture.
Cover and simmer for 5 to 10 minutes.
Garnish with coriander.
