Semi Dry Prawns By Anit Chouhan

Semi dry prawns

Marinade prawns (12-14 pcs). Get pestle and mortar and grind

4-5 garlic cloves

2-3 green chillies

1/2 Handful of spring onions

1/2 Handful of coriander

Sea salt

Drizzle of oil

Grind this and marinade the prawns. (The prawns with the marinade can also be cooked in butter on their own without the masala and they're honestly, fantastic! I do them quite often).

For the masala, slice 2 small onions (leave the slices long) and cook this in a pan with butter. Wait until nicely browned then add

1/2 teaspoon of tumeric

1 teaspoon of coriander powder

1 teaspoon of cumin powder

Red chilli powder to taste (remember you've also got the green chillies in the prawn marinade)

Salt to taste

Method

Give this a quick mix and then add pasata sauce. Cook the mixture well (I gave it around 5-10 mins). I added a couple of tablespoons of water at this point as I didn't want the masala to burn but also don't want it too saucy.

I then added the prawns, mixed and cooked them until done. When they're done, add finely chopped coriander and give it a quick mix before serving.
