Mothers Chicken Curry (Shai Ayoub’s Mum)

My mother making good old comfort food chicken curry

Chicken curry


1 medium chicken cut into pieces

2 medium onions chopped

1 tbs garlic ginger paste

1.5 cups of chopped tomatoes

1”cinnamon stick

Couple green cardamom

1 black cardamom

3-4 cloves

4-5 black peppercorns

1 tsp whole cumin seeds

2 potatoes cut into medium pieces

1.5 tsp salt or according to taste

1 tsp red chilli powder or how hot you prefer

1/2 tsp turmeric powder

1 tsp cumin powder

1 tsp coriander powder

1/2 tsp fennel powder

1/4 tsp aniseed powder

Pinch mace powder

1tbsp Curry Club Basaar

1 tsp Curry Club Garam masala ,

1/4 tsp paprika powder

Chopped fresh coriander for garnish

1 cup oil (veg,corn or olive)


In a pan heat oil,add cumin seed cloves peppercorn cinnamon stick green & black cardamom,once it starts sizzling add the onions(cook on medium high)sauté until its golden brown now add the garlic ginger paste cook for a minute then add the tomatoes,keep stirring until its soft & blends with the onions.

Now add all the dry ingredients gradually mix well(cook on medium low)keep stirring for 10 min then add the chicken pieces & potatoes mix well keep stirring cook on medium high don’t let it stick to the bottom of the pan add 1/2 cup water mix & stir until oil separates and the colour changes (about15 min) now add 2 cups of water or depending how thick you prefer the sauce to be,bring to boil then simmer for 10-15min.

Garnish with chopped fresh coriander.
