Simple but very tasty BBQ lamb kebabs for us tonight served with a mint raita, flatbreads and salad
Lamb kebabs
500 g minced lamb
In a small food processor whizz up
I/2 red onion
A few sprigs coriander
Small handful mint
1 green chilli
10g ginger
10g garlic
Add to the mince along with
1 tbsp veg oil
1tsp garam masala
1 tsp cumin
1tsp kasuri methi
Chilli flakes or Kashmiri chilli powder to your taste
Salt
Pepper
Lemon wedges to serve
Mix really well, cover and chill in fridge until needed, at least half an hour
Remove from fridge to take off the chill before cooking
Shape with damp hands onto skewers or form into patties and either bbq or grill
Baste with melted butter and let rest a few minutes before serving with a mint yoghurt relish
