Cumin Prawn Curry By Linda Knight

Cumin Prawn curry


3 tbs veg oil

Prawns , however many you need for two people

1 onion finely chopped

2- 3 tomatoes chopped

1 tsp cumin seeds

1 green chilli finely chopped, add more if you like a hotter dish

1 tbsp ginger / garlic

1 tbsp tomato purée

small bunch coriander , stems finely chopped , leaves chopped kept for garnish

1 tsp cumin

1tsp Kashmiri chilli powder

1/2 tsp turmeric

1 tsp kasuri methi

Squeeze lemon juice




Method


Heat oil, add cumin seeds and let sizzle

Add onion and cook until golden

Add chopped coriander stems, green chilli and ginger/ garlic and cook out.

Then add the cumin , turmeric and chilli powder , add a splash of hot water from the kettle to stop burning if needed

Add the tomato purée

Add tomatoes and cook until oil leaves sides of pan 10- 15 mins you want them cooked down, add hot water if you think they’re sticking

Adjust the consistency of sauce to how you want it and add the kasuri methi and your prawns, putting on the lid until prawns are cooked

Add a squeeze of lemon and enjoy
