Butter chicken


500g diced chicken

300ml of chicken stock

2 tomatoes finely diced

Lemon juice from half a lemon

2tsp chilli powder

2tsp paprika

1tsp of garam masala

2tbsp tomato puree

3 large tablespoons of plain yogurt

1tbsp of garlic ginger paste

2 tsp salt

Optional: coriander leaves


Put everything into a bowl and mix well.

Cover with cling film and leave for an hour or longer.

Heat some oil in a pan

Add the mixture

Cook for a 10 mins stirring

Add the chicken stock and simmer covered on a low/medium heat for 40 mins.

Stir in some yoghurt before serving.

Garnish with chopped coriander (if using)
