BRADFORD BAD BOY CURRY RECIPE.
Spice level 🌶🌶🌶🌶
Feeds 4 adults
4 green cardamom pods
1tsp fenugreek seeds
1tsp fennel seeds
1tsp cumin seeds
9-10 curry leaves
1” stick of cassia bark (cinnamon stick)
1tsp cumin powder
Half tsp salt
1tsp coriander powder
1tsp turmeric powder
2tsp hot chilli powder
2tsp garam masala powder
2 tins of good quality plum tomatoes (chopped into quarters)
600 grams of chicken
400ml of boiling water
Half a cup of oil
2 large onions diced
Heat oil in pan for a minute
Add contents of dried spice and cook for around 2 minutes
Add diced onions and cook until golden (around 10 minutes, stirring occasionally for even cooking)
Add all powdered spices and cook for 1 minute constantly stirring to avoid burning
Add the 2 tins of tomatoes and mix well.
Cook until oil separates, around a minute on high heat
Add the 400ml of boiling water and mix well.
Add the 600g of raw chicken mixing well.
Cover pan on high heat for 15 minutes
Uncover pan and give a good stir
Reduce heat to medium and cover pan for a further 10 minutes.
Garnish with fresh coriander and chilli
