Aubergine And Tomato By Tracey Ramseebaluck

Aubergine and Tomatoes.


1 big Aubergine cut in chunks

1large onion chopped

2 large Tomatoes chopped

1tbsp grated ginger

1tbsp crushed garlic

2 or 3 green chillies chopped

9or10 curry leaves

half tsp onion seeds

1tsp cumin seeds

1 heaped tsp Coriander powder

1heaped tsp cumin powder

half tsp Amchoor powder

half tsp black pepper

half tsp turmeric

1tbsp tomato puree

1tsp kasuri methi

1tsp The Curry Club(Home Cooking) Garam masala

salt to taste

chopped coriander to garnish,


Heat 3 to 4 tbsp oil in pan then add cumin seeds ,onion seeds,and curry leaves, cook 30 to 40 seconds, then add chopped onions and cook till soft and golden then add garlic ,ginger cook till the raw smell is gone,then add tomatoes and green chillies and tomato puree mix well and cook till tomatoes are soft then add powdered spices except garam masala, cook till tomatoes are mushy and oil separates, then add about 150mls hot water then add Aubergine mix well then cover and cook on medium heat till Aubergine is nice and soft season with salt, add kasuri methi, mix cook another 6 or 7 minutes, then sprinkle garam masala over top and garnish with coriander.
