TCCHC Lamb Curry By Anthony Dumble

TCCHC Lamb curry

Truly amazing and tasty


1 kg chopped lamb with bone

4 tablespoons vegetable oil

1/2 teaspoon cumin seeds

4 curry leaves

2 sliced red chilli

4 cloves

2 black cardamoms

4 chopped onions

5 chopped tomatoes

1 tablespoon garlic & ginger paste

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon cumin powder

1 teaspoon turmeric powder

1 teaspoon Kashmiri chilli powder

1 teaspoon coriander powder

800ml of chicken stock

1 tablespoon malt vinegar


Heat the oil in a pan then add the coriander seeds sliced chilli pepper cumin seeds curry leaves cloves and cardamoms cooking for a few minutes till the seeds start to crackle

Then and the chopped onions cook till golden brown

Then add the chopped tomatoes garlic and ginger paste cook for 5 minutes then add the chilli turmeric and coriander cumin powder and salt to taste plus one chopped green chilli pepper cook for ten minutes keep stirring add the lamb mix in well cook for 15 you will have to add a little was during this part

Add the grama masala powder

Now add the 800ml of chicken stock and a splash of malt vinegar about tablespoon

Simmer for 40 minutes or till the lamb is tender
