Spicy Lamb And Potato Curry By Jane Canty

Jane's Spicy Lamb and Potato curry ( adjust spice to suit your own taste)

For 2 people, with bit extra for seconds.


Approx 250g cooked or raw lamb

2-3 medium peeled chopped potatoes

1/4 cup olive oil

1 star anise

2 bay leaves

3 green cardomon pods

1 lge red onion chopped

1 Tbsp garlic paste

1 Tbsp ginger paste

1 tsp ground cumin

1 tsp ground coriander

1 tsp garam masala

1/2 tsp tumeric

3/4 tsp kashmiri chilli powder

1 can chopped tomatoes

2 tsp mango chutney

1 Tbsp coriander stalks

1 Tbsp frozen coriander( all Ihad)


Heat oil, add star anise, cinnamon sticks, bay leaves, cardomon pods, let sizzle gently for 2 mins, don't burn.

Take off heat and add the onion, let sizzle for 5 mins, turn heat down, let sizzle gently for another 10 mins, stir, stir, stir

Add the garlic and ginger paste, stir, turn heat up for 1 min

Take off heat, add ground spices, add back to heat, stir continuously for 2 mins, add splash water.

Add uncooked meat now, coat thoroughly.

Add tinned tomatoes and coriander stalks and either frozen or fresh coriander. Add parboiled chopped potatoes.

Turn heat up to gentle boil, then turn down to gentle simmer, lid on. Add water if needed, stir regularly. Leave simmering untill meat is cooked, I left mine gently simmering, really low for 45 mins( I used cooked lamb)

Turn off untill ready to eat, enjoy

Feel free to adjust chilli levels. This gave a lovely tingle at back of the throat.
