Mums lamb curry with fresh fenugreek potatoes and fresh coriander
Ingredients
300ml water
1/2 kg meat
3 medium onions finely sliced
1 tbsp fresh ginger garlic paste
1 cup tomato passata
1/2 tsp paprika
1 tsp coriander powder
1 tsp cumin powder
1/2 tsp turmeric
salt taste
1 tsp chilli powder
1/2 tsp fennel powder
1/4 tsp Mace powder
1/4 clove powder
1/2 tsp crushed black pepper
1 black cardamom
1 cinnamon stick
1/2 cup vegetable oil
handful of freshly chopped fenugreek leaves
2 to 3 potatoes chopped
fresh coriander
water
Method
1. Add approximately 300 ml water in a pan.
2. Add the meat.
3. Add the onions finely, fresh ginger garlic paste, tomato passata, paprika, coriander powder, cumin powder, turmeric, salt, chilli powder, fennel powder, mace powder, clove powder, crushed black pepper, black cardamom, cinnamon stick, vegetable oil - can add more later if required halfway through.
4. Cook moderate high heat once the water starts evaporating stir frequently until oil levels rise to the top.
5. Add a handful of freshly chopped fenugreek leaves.
6. Add the potatoes.
7. Add fresh coriander
8. Keep stirring until the colour darkens “bhuna process” about 10 minutes.
9. Add approx a mug of water ( more if you want more sauce ) bring to boil then simmer until potatoes cooked
Enjoy with Roti or Rice 🤤
