West Indian Jerk Chicken By Anthony Dumble

West Indies dish

Jerk chicken


5 whole chicken leg sliced

1/2 cup fresh orange juice

1/2 cup white vinegar

1 tablespoon Fresh chopped thyme

3 chopped spring onions

Half a scotch bonnet no seed unless you love the heat

1 tablespoon finally chopped ginger

4 crushed garlic cloves

1 teaspoon salt

1 teaspoon cumin powder

1 teaspoon gram masala powder

1/2 teaspoon black pepper

1 teaspoon allspice

1/2 teaspoon mixed spice

1 1/2 teaspoon sugar

1 tablespoon dark soy sauce


Simply put all the ingredients into a blender and blend for a few seconds so like a lumpy bump texture

And marinate the chicken with this leave over night best cooked on charcoal bbq
