Rainy day calls for homemade sonfi (fennel) rusk cake with desi tea, hubby’s favourite 💜

Having tried a few online recipes; I have adjusted to my liking as follows;


Rusk recipe


1/2 cup butter

1/2 cup sugar (I use Demerara sugar)

1 cup plain flour

1 tsp baking powder

2 eggs (room temp)

2 Tblspoon milk powder

1/2 cup milk

1 tsp fennel seeds

2 tsp vanilla extract



Cream the butter and sugar together, add the rest of the ingredients and mix. Bake in preheated oven at 180 degrees for around 30 mins. when cooked rest the cake for 10 mins, then slice it evenly and back in oven lying flat on a tray bake each side for 10 min at 150 degrees, enjoy when they cool down. x
